It should not. We mirror the site, database and mailboxes onto the new server, test on staging at your peak numbers, lower DNS TTLs a day or two ahead, then cut over in an off-peak window. Your old host stays running until propagation finishes, so visitors keep reaching a working site throughout. Nothing is deleted on day one.
A VPS is a guaranteed slice of a physical machine: your CPU, RAM and disk are reserved, and the hardware underneath is shared with other isolated slices.
